Ascorbic acid is a water-soluble antioxidant that acts as an by preventing lipid peroxidation (which results in free radicals and oxidative damage to proteins cellular membranes). It is used in the prevention and therapeutic application of burns, cancer, atherosclerosis, hyperlipidemia, and various other conditions that are caused or have developed secondary to exposure harmful substances (eg. free radicals). There is also evidence of a role in the metabolism of fat-soluble vitamins A, D, E, and K.
The active form of antioxidant, ascorbic acid 2,3-dinitrobenzene sulfonic (1,2-dihydroxy-1,2-dihexediol), has antioxidant power comparable to the vitamins.
Ascorbic acid was studied for its antioxidant activity in combination with different ingredients
