| A Really great and easy Summer Sausage recipe. We had this at one of the Beer-runs, and was it ever good. This requires no special tools, or equipment, and can be made by anybody. | ||

| Ingredients: | ||
| 4 Lbs. | Ground Hamburger, or Ground Venison the cheaper or tougher, the better | |
| 3 tsp. | Liquid smoke | |
| 1/4 tsp. | Garlic powder | |
| 1 tsp. | Onion powder | |
| 2 tbsp. | Mustard seed | |
| 2 tsp. | Coarse pepper | |
| 6 tbsp. | Morton tender quick | |
| Instructions | ||
| Mix all ingredients, except the meat in a large bowl. | ||
| Add meat, and mix well. | ||
| Make into 2" (inch) rolls, on the shiny side of aluminum foil. | ||
| Refrigerate for 24 hours. | ||
| Prick the bottom of the foil with a fork. | ||
| Bake on a wire rack, on a cookie sheet so the grease drains, for 75 minuets at 325 degrees. |
