A Really great and easy Summer Sausage recipe. We had this at one of the Beer-runs, and was it ever good. This requires no special tools, or equipment, and can be made by anybody.
Lets get started !!    
4 Lbs. Ground Hamburger, or Ground Venison the cheaper or tougher,
3 tsp. Liquid smoke
1/4 tsp. Garlic powder
1 tsp. Onion powder
2 tbsp. Mustard seed
2 tsp. Coarse pepper
6 tbsp. Morton tender quick
  Mix all ingredients, except the meat in a large bowl.  
  Add meat, and mix well.  
  Make into 2" (inch) rolls, on the shiny side of aluminum foil.
  Refrigerate for 24 hours.  
  Prick the bottom of the foil with a fork.  
  Bake on a wire rack, on a cookie sheet so the grease drains, for 75 minuets at 325 degrees.
